Blueberry Overnight Quinoa

Ingredients
- 1 cup cooked quinoa
- 5 tablespoons chia seeds
- 2 cups milk of choice
- 3 tablespoons maple syrup
- 1 tablespoon vanilla extract
- 1/4 teaspoon kosher salt
- 3 cups fresh or frozen blueberries (compote)
- 3 tablespoons maple syrup (compote)
- 1/8 teaspoon salt (compote)
Instructions
- Combine cooked quinoa, chia seeds, milk, maple syrup, vanilla, and salt in a bowl. Mix well.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Combine blueberries, salt, and maple syrup in a saucepan. Bring to a boil, then simmer until thickened (15-20 minutes).
- Divide quinoa base into 4 jars halfway, add blueberry compote, top with more quinoa, then more compote.
