  1. Add vinegar, water, sugar, and salt to a saucepan and bring to a boil.
  2. Rinse blueberries, place in a jar, then pour brine over them. Let sit 3 hours or until cooled.
  3. Massage kale with lemon juice, olive oil, zest, salt, and pepper for 2-3 minutes.
  4. Divide kale between 4 bowls. Top with wild rice, chicken, cucumbers, feta, walnuts, and pickled blueberries.
  5. Drizzle each bowl with reserved pickling juice, lemon juice, and olive oil. Season to taste.
