Chicken Grain Bowl with Pickled Blueberries

Ingredients
- 1 cup water
- 1 cup white wine vinegar
- 1 cup sugar
- ½ tablespoon kosher salt
- 2 ½ cups blueberries
- 3 cups shredded curly kale
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 tablespoons lemon zest
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 cups cooked wild rice
- 1 pound cooked chicken breast, chopped
- 2 cups cucumber, chopped
- 1 cup feta cheese, crumbled
- ¼ cup walnut pieces
Instructions
- Add vinegar, water, sugar, and salt to a saucepan and bring to a boil.
- Rinse blueberries, place in a jar, then pour brine over them. Let sit 3 hours or until cooled.
- Massage kale with lemon juice, olive oil, zest, salt, and pepper for 2-3 minutes.
- Divide kale between 4 bowls. Top with wild rice, chicken, cucumbers, feta, walnuts, and pickled blueberries.
- Drizzle each bowl with reserved pickling juice, lemon juice, and olive oil. Season to taste.
